Growing this salad mix is simple and doesn't require a garden—just a shallow tray, soil or grow medium, and good light. Fava beans, peas, and sunflower seeds should be soaked in cool water for 8 to 12 hours to jump-start germination. Buckwheat can be soaked for 4 to 6 hours. Fill trays with 1 to 2 inches of organic potting mix or a sterile grow medium. Spread seeds evenly over the surface, pressing them gently into the medium. Cover the tray with another tray or damp paper towel for 2 to 3 days to allow germination in the dark. Once sprouted, remove the cover and place under bright light (natural or grow lights). Keep soil moist but not soggy. Misting is ideal. Microgreens should be ready for harvest in 7 to 14 days, when the first set of true leaves appears. Cut just above the soil line.
