The large flower spikes, dense with purple blooms, are borne on long stems that stand erect, well above the foliage, reminiscent of candles on a birthday cake (hence the name). The nectar-rich flowers are mildly but sweetly fragrant and extremely pollinator friendly, attracting tons of bees, butterflies, and hummingbirds.
